Led by Beverage Director Kevin Beary, our team at Three Dots and a Dash has spent countless hours perfecting their craft to create the ideal island getaway and destination for celebrations. As connoisseurs of rum, we have researched tirelessly to source and create the best possible tropical cocktails. So, escape to tropical paradise with us at our blissful sanctuary beneath the streets of Chicago, we’re pleased to introduce you to the wonders of exotic cocktails.

Freshly Made Juices

Our bar operates a full-scale cold-press juice kitchen, producing over 60 gallons of fresh juice daily during peak prep times. We source the highest quality citrus from domestic farms, designing our menu around the seasonality of California, Texas, and Florida produce. Our beverage program uses only in-house made ingredients, including over 30 cordials, syrups, and other cocktail components. A dedicated team of juice and garnish specialists, along with a barback for advanced prep, ensures everything is ready to serve, seven days a week.

Modern Techniques

We embrace cutting-edge techniques to perfect our cocktails, including using a 6L centrifuge for force clarification, liquid/gas nitrogen for force carbonation and juice preservation, dehydration for garnish, a Bucchi i700 rotary evaporator for precise flavor concentration, a JBT Multifruit citrus juicer for efficiency in juice extraction, and the Pressed Rite PR-100 cold press for producing high-quality fresh juices. Every recipe is meticulously measured in metric units for precision, with final products spot-checked using a refractometer to ensure consistency, alongside taste testing for quality.

Mocktails

Our non-alcoholic cocktails are crafted with the same creativity and flair as our traditional offerings. We focus on developing complex flavor profiles that capture the essence of classic tropical drinks, minimizing juice content and avoiding store-bought non-alcoholic spirits. Instead, we make our own in-house, using a curated selection of spices, teas, and both fresh and dried ingredients.

Join us at Three Dots and try our Sunday Scaries with coconut water, pandan, and sobacha tea, or the Watermelon Nombie with spirit-free zombie amaro, lemon, and grapefruit oleo. Alternatively, visit The Bamboo Room to enjoy the Coco-Nana, featuring wild thai banana and fresh coconut water, or the Rising Tides with our house-made spirit-free amaro, lime, and fresh watermelon.

Group Cocktails

At Three Dots and a Dash, our group cocktails are designed to make your gatherings unforgettable.

Start with the Sippopotamus, a refreshing blend of blanco tequila, Venetian aperitivo, passionfruit, pineapple, and lime, perfectly crafted to serve 2-3 people. For a classic experience, enjoy the Zombie – a robust mix of aged Jamaican and St. Lucia rum, overproof rum, lime, grapefruit, and spices, ideal for 3-4 people.

For larger celebrations, explore the Bali Bali with its Caribbean rum blend and tropical fruits, the Treasure Chest featuring long-aged Venezuelan rum and a medley of exotic flavors, the Port Royale with its 15-year-old Appleton Estate Jamaican Rum and vibrant fruit mix, and the Conch Out, a unique combination of Japanese whiskey and aged cachaça.

Our menus center around rum and rhum agricoles, and has developed into a meticulously curated collection of over 300 rums from both popular and underrepresented regions and islands like St. Lucia, Martinique, Barbados, and Guyana. The depth of our spirits menu ensures that we are working with both large and small suppliers and portfolios.

Try the Peachcomber, a refreshing blend of White Peach Infused Blanc Vermouth, Verjus Blanc, Pink Peppercorn, and CO₂ for a delicate yet vibrant taste. Or enjoy the Blue Footed Booby, which combines Blueberry Amaro, Pineapple Amaro, Lime, Pineapple, and Blueberry Cordial for a beautifully balanced, fruity experience. Kevin Beary

Beverage Director

Our beverage program is led by Kevin Beary. With a deep understanding of historic rum recipes and a flair for creativity, Kevin has elevated our cocktail offerings to new heights. His innovative approach combines bold flavors, custom glassware, and dramatic presentations to create a truly immersive experience for our guests.
Kevin's expertise extends to The Bamboo Room, our intimate rum bar, where he curates a unique collection of rare and esoteric rums. Recognized as one of Esquire’s Best Bars in America and a North America’s 50 Best ‘One To Watch,’ The Bamboo Room is a testament to Kevin's passion for showcasing the stories and flavors behind each rum. Under his direction, both Three Dots and a Dash and The Bamboo Room continue to set the standard for exceptional cocktail experiences in Chicago.

Tyler MacLellan

Bar Manager

Bar Manager Tyler MacLellan joined our team at Three Dots and a Dash in 2022, bringing a rich background in hospitality and mixology. Raised in Appleton, Wisconsin, Tyler's career began in the restaurant industry at just 15. He quickly advanced, earning a General Manager position by the age of 20, which fueled his passion for exceptional service.
In his role as Bar Manager, Tyler leads with enthusiasm and a hands-on approach, ensuring smooth operations and inspiring his team to excel. His commitment to the craft is reflected in his participation in the Tales of the Cocktail Foundation’s Cocktail Apprenticeship program in 2023. Tyler is eager to further explore the world of rum and rhum agricole, sharing his knowledge and experiences with both his team and the next generation of restaurateurs.
